cheddar turkey casserole

Makes 2 pans
2 c chicken broth
2 c water
4 t minced onion
2 c uncooked long grain rice
2 c frozen peas
4 c cubed turkey
2 Cans cheddar cheese soup
2 c milk
1 t salt
2 c butter flavored crackers
6 T butter melted

bring broth, water, onion to a boil. reduce heat. add rice; cover and simmer for 15 minutes, remove from heat and fluff.
divide rice between baking pans. sprinkle with peas and turkey. in a bowl combine soup, milk , and salt until smooth; pour over turkey. toss the cracker crumbs and butter, sprinkle on the top. Bake at 350* fir 35 minutes.
