Corn Salad

From Mel's Kitchen Cafe

2 Cans of corn
1/2 cup finely diced red onion
1 cup cherry tomatoes, sliced in half
3 tablespoons red wine vinegar
1 tablespoons extra-virgin olive oil
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup julienned fresh basil leaves

Mix together, and enjoy.
My kids do not like this:(, but I do;)

Pina Colada's

If you like Pina Colada's and getting lost in the sand....

4 oz cream of coconut
4 oz pineapple juice
2 C ice
frozen pineapple chunks

Blend together.

Top with a cherry

BBQ Chicken Rub

From Sister's Cafe

2 Tbs Paprika
2 Tbs chili powder
2 tsp salt

Rub on, then bast with Famous Daves BBQ sauce while grilling. Cook on Med for 10-20 minutes
